Let’s start with Amuse Bouche like Chef’s Pate de Champagne with Organic Vegetable Pickles. Chef Yuya used Pork neck, shoulder, tenderloin, and duck breast blended with caramelized onion until you get just a bit of sweetness. He also served this one with vegetable pickle to get sourness so this dish can have a perfect combination. Next is the first Hors D’oeuvre with 4 special specialties; French Foie Gras Terrine, Seafood Gazpacho shot, Oriental Blue Prawn and Caviar Salad, and Ginger Consommé Royal. I really fall in love with the Ginger Consommé Royal that chef spent 3 days just to make this. I love the way it gave ginger essence and delicacy taste. The second Hors D’oeuvre is Grilled Hokkaido Scallops on the Bed of Organic Green Asparagus with French Chardonnay Sauce and Parmesan Crisps that he used gigantic scallop grilled and the best part is Chardonnay sauce that chef takes 2 days to prepare. You will get the sweet essence of Chardonnay even before the plate hit the table. For main course I order Poele of Sea Bass with 25 year Italian Balsamic Sauce and Extra Virgin Olive Oil serve with Seasonal Vegetables that the sea bass is very well grilled until get the crispy skin and tender meat. You’ll love the sourness from great selected balsamic sauce. For the dessert I had Chef’s Chocolate Declination that the base is moist chocolate cake pair with maple ice cream then chef add some crispiness with grounded walnut with maple syrup. This is the way to end the meal perfectly.
